I am 62.5" (1.59 m) tall. I weigh ~135 lb (consist of ~60 kg.) I am 28 years (28 years) old. Who wants to know? According to the Helpdesk, "people.unt.edu web server... is intended for general personal information" rather than the academic application for which I requested help. Finally, someone set me straight about what the internet is really for. And all this time I'd been cursing cat lovers and teddy-bear collectors for wasting energy and muddling searches. I'm sorry. I just didn't know. I'm trying to make up for it, though. Fabu Veggie Recipes
Eggplant Burgers or Meatballs
Ingredients:2 or 3 eggplants
2 eggs (half-beaten) *OR* ~1.5 c red pasta sauce
1 cup grated parmesian or mozzarella cheese
1 to 2 cups breadcrumbs
spices: garlic, oregano, basil, black pepper, nutmeg.
Olive oilPeel, quarter, and boil the eggplant until tender (~10 min)
Cool and drain eggplant (~15 min)Kind of half-mash the eggplant, like with a potato masher.
Add the eggs and mix well.
Add cheese and spices.
Gradually add the breadcrumbs until mixture is easy to shape.Shape into patties and fry at a moderate tempurature. Start with only ~2T olive oil;
you will need to replenish it while cooking (eggplant is thirsty)*OR*
Shape into meatballs and bake at 400º until browned.
Pumpkin Pie
Pie Topping
Preheat oven to 350ºF.
Blend until custardy:12 - 16 oz soft tofu
2c pumpkin puree (1 can or ~1 sugar pumpkin's worth)
1/3 c oil
1 t salt
1 c brown sugar or equivalent
spices: cinnamon, ginger, nutmeg, vanilla extract.Pour into unbaked pastry shell.
Bake for 1 hour.
Let set.
Blend until creamy:8 oz soft tofu
4 oz oil
1 tsp lemon juice
1/4 c sugar or equivalent
pinch salt
1 tsp vanillaChill.
Salad with Tofu StripsCut 1 lb extra-firm tofu into bite-sized strips.
Marinate overnite in:8 oz shoyu
2 oz lemon juice
2 oz honey
1 oz grapeseed oil
1 - 2 t cider vinegar
1 thumb ginger, sliced thin
1 small white onion, dicedSaute strips at a low temperature until brown.
Drain strips on a dishcloth or paper towel and allow them to cool.
Serve over salad greens, the way some do with yucky chicken strips.
Great with sesame dressing.
