QUAKERS (Oatmeal - Raisin Cookies) 2 cups Brown Sugar 1 cup Margarine (Parkay/Bluebonnet) 2 Eggs, beaten 2 cups sifted flour 3 cups quick oats 11/2 tsps soda 1 tsp salt 2 tsps vanilla Cream togethe the sugar and margarine. Add beaten egg and vanilla. Sift flour, salt, and soda together, then stir in the oats. Then stir the dry mixture into the moist batter. Mix well. Get a heaping teaspoon of batter; roll into a ball. Then, and this is the secret -- roll the batter ball in regular white sugar, just a light coating though. Put the balls of dough on a greased cookie sheet. (Those air bake pans are nice.) Bake at 325 degrees for about 11 minutes. The cookie should not be hard, just browned enough to stay together. Soft cookies are the best. ENJOY warm cookies with milk.
